This photo, it should be admitted, is clearly not mine. It's from SmittenKitchen, along with her recipe for Zucchini and Ricotta Galette. I'm a decent baker and we eat well around here, but this was a whole new story. Forrest is usually more of a sustenance eater, but from the first bite he took till after the last crumbs of our third slices each, he was waxing poetic about the crust, envisioning new fillings, and extolling the virtues of growing your own squash (I used yellow straight-neck). Also, I of course used homemade ricotta- because store bought is nasty and I'm obsessed with the deliciousness of the good stuff (which I nearly doubled from what the recipe called for). I planned to serve it with a salad, but once Forrest saw the galette he didn't want to wait for anything else- frankly neither did I. But we did eat some delicious watermelon with it. Perfect summer food.
